The Truth About Your Yogurt

If there’s one thing I’ve learned about health, it’s that food can be either a trigger or a tool. And when it comes to gut health, the right foods can make all the difference. That’s exactly why our live-cultured yogurt exists—not just as a product, but as a carefully crafted, gut-supporting staple that has been part of my life long before 86 Cold Press ever began.

With just three ingredients—dairy, cultures, and honey—and a 24-hour fermentation process, this yogurt is as pure as it gets. It’s rich in probiotics, virtually lactose-free, and a powerhouse for digestion and overall well-being. But before we get into the science, let’s go back to where it all started.


 

Before I was making juice, I was navigating my own health struggles with Crohn’s. Digestive issues were a constant battle, and traditional dairy products were completely off the table. I was searching for foods that would work with my body, not against it, and that’s when I discovered the Specific Carbohydrate Diet (SCD).

This diet, introduced to me through Breaking the Vicious Cycle by Elaine Gottschall, was a game-changer. The core philosophy behind SCD is simple: eliminate complex carbohydrates and hard-to-digest sugars that fuel gut inflammation and bacterial overgrowth. Instead, you focus on whole, easy-to-digest foods that allow the gut to heal. And at the heart of this diet? Properly fermented, probiotic-rich yogurt.


This wasn’t just about avoiding dairy—it was about transforming it. The SCD method of making yogurt uses a 24-hour fermentation process, a step that makes all the difference when it comes to digestibility and gut health. I started making it as part of my own healing journey, and before I knew it, it became a daily staple—blended into smoothies, eaten by the spoonful, or used as a creamy base for dips and sauces.


Now, years later, it’s still the same process, the same simple recipe, and the same intention: to support gut health in the most natural way possible.


The Science: 24-Hour Fermentation is Everything.

If you’ve ever struggled with bloating, discomfort, or gut issues after eating dairy, lactose is likely the culprit. Lactose is a natural sugar found in dairy, and for many people—especially those with digestive sensitivities—it’s difficult to break down. The body needs a specific enzyme, lactase, to properly digest it. Without enough lactase, undigested lactose can ferment in the gut, leading to bloating, gas, and inflammation.


Most store-bought yogurts are fermented for just three to four hours before being packaged and sold. This means they still contain a significant amount of lactose, making them hard to digest for many people.


But when you extend the fermentation time to 24 hours, something incredible happens:

  • The live cultures fully break down the lactose, making the yogurt virtually lactose-free. The body doesn’t have to struggle to digest it—because the work has already been done.

  • Probiotic levels skyrocket. The longer fermentation allows beneficial bacteria to multiply, making this yogurt a powerhouse for gut restoration and microbiome support.

  • Your body gets an energy boost. Since your system isn’t using extra energy to digest difficult sugars, that energy is freed up for other things—better digestion, clearer thinking, and more endurance for physical activity.


And the difference doesn’t just stop at digestion—you can taste it. Store-bought yogurts, especially those that are ultra-processed, tend to have a chalky or gummy texture, a sign of added stabilizers and thickeners. Our yogurt? Pure, creamy, and naturally tangy—the way real yogurt should be.


 

It can be more than just a spoonful. What I love most about this yogurt is how versatile it is. Sure, you can eat it straight from the jar (which I do all the time), but there are so many ways to make it part of your daily routine.


  • Blended into smoothies for an easy probiotic boost

  • As a creamy dip for bananas, apples, or berries

  • Mixed with honey and cinnamon for a simple, nourishing snack

  • Swapped for sour cream in recipes (think tacos, baked potatoes, and dressings)

  • Spread on toast with a drizzle of honey


One of my favorite ways to use it is in our Berry Beet Smoothie, a refreshing and nutrient-dense blend that brings together probiotics, antioxidants, and anti-inflammatory ingredients in one delicious drink.


Berry Beet Cold-Pressed



Smoothie

✔️ 4oz Feel the Beet juice.

✔️ 1/3 cup live-cultured yogurt.

✔️ 1/2 cup frozen strawberries.

✔️ 1/4 cup frozen blueberries.

✔️ A few cubes of açai (found in the frozen fruit aisle).

✔️ 1/2 banana.

✔️ 1 tbsp honey


Directions: Blend until smooth and enjoy! The yogurt makes it extra creamy, while the natural sweetness from the honey, berries, and açai rounds out the earthy goodness of Feel the Beet. It’s the perfect way to fuel your gut while giving your body an energy boost.
